Salba Enriched Peanut Butter Cookies

Crunchy on the outside, soft and chewy on the inside, Salba Enriched Peanut Butter Cookies taste almost too good to be true. You'd never dream they're chock full of Omega 3 and fiber!

Ingredients:

Cookies1 cup unsweetened applesauce
1 cup crunchy peanut butter
1 teaspoon vanilla
3/4 cup brown sugar
1/2 cup white sugar
1 to 1 1/3 cup whole wheat flour
(start with 1 cup and add more if needed )
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup Salba

Directions:

Preheat oven to 275 degrees. Combine applesauce, peanut butter and vanilla together, mixing with a spoon. In another bowl, combine the brown and white sugar, whole-wheat flour, baking soda and salt. Combine contents of the two bowls and slowly mix in the Salba.

Make 20 balls and space them out on a cookie sheet, flattening the balls a bit. Bake cookies at 275 for 20 minutes in middle rack of oven. Cookies should be soft when they come out of the oven. Place them on a wire rack and let them cool for 15 minutes.

Yield: 20 cookies
Nutritional Content Per Cookie:
Total Protein: 3.6 grams
Total Fat: 5.4 grams
Omega 3: 1.4 gram
